Culinary Project Initiatives by Second-Year Diploma Students
As part of the coursework for the AHHM2623 Catering System and Operation module, second-year students from the Diploma in Culinary Arts programme successfully organised and executed two major culinary projects. These initiatives were conducted under the guidance and supervision of Mr. Chow Kean Hoong, providing students with valuable hands-on experience in event planning, food preparation, and service management.
The first event, titled “Happy Hour Buffet,” was held on 6th May 2025 from 6:00 PM to 8:00 PM. This evening event featured a diverse selection of buffet-style dishes, showcasing the students’ ability to manage kitchen operations, menu planning, portion control, and customer service within a real-time dining environment.
The second project, the “Street Food Fair,” took place on 9th May 2025 between 11:00 AM and 2:00 PM. This lively daytime event replicated the atmosphere of a traditional street food market, offering a variety of local and international street-style dishes. Students were responsible for conceptualising and executing the entire setup—from stall design and food production to pricing strategies and customer interaction.
Both events served as practical platforms for students to apply the culinary knowledge and operational techniques they have learned throughout their studies. These projects emphasized teamwork, time management, food safety, and efficient coordination, equipping students with industry-relevant skills essential for their future careers in culinary arts and catering operations.
